Our holiday in Denmark is almost over! Time seems to have flown by, despite us not doing much. I did bring stuff for making stuff, but I haven’t made a lot. Only a little bit. But maybe that’s ok too.. Maybe I don’t always have to DO stuff…?
We did have some friends round for dinner last Sunday which was nice! We had this for dessert. I’d seen the dessert in a magazine and it looked yummy and quick to make. It was both, yay!
Thin sponge cake (which you can buy ready made here in Denmark) cut into circles. Ice cream sandwiched between 2 cake circles and then you decorate the top circle with icing sugar and other fun things. Delicious!
I think I might try making a chocolate sponge and pair it with a berry ice cream of some kind.. I think that would be rather yummy, don’t you?

There was some icing sugar leftover and my sweet-tooth husband thought it’d go well with a marshmallow… A bit too sweet for my taste, but the colours are pretty, no?
