You can have delicious pizza even without the cheese! It’s true. Recently, this is my favourite pizza.
This should be enough for 2-4 people depending on how hungry you are and whether you’re just having the pizza or having it with chips (fries) or a salad or something.
You’ll need:
a portion of your regular pizza dough.
3 tomatoes
1 small onion
2 small chilies (more or less, depends on how much you like chili of course!)
1-2 cloves of garlic
approximately 4-5 tablespoons olive oil
2 tablespoons of oregano
2 tablespoons of basil
salt to taste
You can of course add other ingredients, finely sliced peppers for example.
Finely chop the garlic and chili, or as finely as you can be bothered. Mix with the oil in a bowl. Add the oregano and basil. If you make this mix in advance the oil will take in more of the taste of the other ingredients. Slice the tomatoes. Chop the onion as finely or not as you like. I like it fairly fine.
Roll out your pizza dough and spread 1/4 of the oil etc mix on it. Add the tomato slices and the onion.
Mix the remaining oil etc with about 1 deciliter (a bit less than half a cup) of water. Drizzle over the top of the pizza. This watery mix will make the pizza base feel slightly soggy, but it is cooked! Bake for about 20 minutes in a 200°C oven (fan assisted). Enjoy!
